Best Way to Create PDF Records of Client Communications from Office 365?

I'm a consultant and most of my client communication happens through Office 365. Recently, one of my clients requested complete records of our discussions spanning more than a year. They specifically wanted everything in PDF format for documentation purposes.

My first thought was to manually print emails to PDF. However, after seeing the volume of messages involved, I quickly realized that manually saving every conversation would take days.
